Banana and Honey Wheat Bread Recipe



Not sure what to do with those unwanted bananas? Add them to this simple honey wheat bread recipe.

Ingredients: (all organic)

2 cups wholemeal self-raising flour
1/2 cup white self-raising flour
1/2 cup brown sugar
125g unsalted butter
1/2 tsp bicarbonate soda
1/3 cup raw honey
1 cup milk (soy ok to use)
2 large ripe bananas or 3 medium size
1 large egg
50g natural walnuts (can use pecans as well)

Method:

Preheat oven to 170 degrees C (340 degrees F). Sift flour into a large mixing bowl, add brown sugar, mix lightly. Melt butter with honey over low heat, cool slightly.

Make well in centre of dry ingredients. Add mashed bananas, walnuts, beaten egg, combined bicarbonate of soda and milk and butter mixture. Mix well.

Pour into greased and lined 23cm x 13cm loaf tin. Bake in the pre-heated oven for 1 hour and 15 minutes or until cooked when tested.
