Low Fat Organic Minestrone Soup Recipe

Chock full of organic veggies, this minestrone soup recipe is sure to please! It is a low fat soup recipe that's great for those cold winter days.

Ingredients: (all organic)

3 cups of your favourite cooked pasta (any shape)
5 cups of chicken stock
1 cup of tomato paste
3/4 cup of kidney beans, cooked
1 cup of garbanzo beans, cooked
1 onion chopped
2 cups of squash, chopped
1/2 cup of carrot, chopped
1/2 cup of celery, chopped
1/3 cup of parsely, minced
2 large fresh tomatoes, chopped
1 cup of frozen or fresh peas
2 large cloves of garlic
1 teaspoon of black pepper
1/2 teaspoon of basil
1 tablespoon of salted butter
1 large bay leaf, whole

Method:

Wash and chop all the vegetables. Saute the vegetables and butter over medium heat. Add the beans, stock, tomato paste and seasonings. Let it simmer for 15-20 minutes.

Add your favourite organic pasta and let it simmer for another 15 minutes. Top your minestrone soup with grated organic parmesan cheese.

Serves 10
