Coconut Oil Recipes - Coconut and Carrot Muffins



This simple recipe can be made easily by any willing cook.

Ingredients:

1/3 cup boiling water
1/2 cup raisins
2 cups grated carrot
1 cup grated zucchini
2 tablespoons coconut oil
1 medium green aple - chopped
3/4 cup shredded coconut
1/4 cup roughly chopped walnuts
1 cup ground flax seeds
1/2 cup brown sugar
2 cups wholemeal or spelt flour
1 tablespoon ground cinnamon
1 teaspoon baking soda
1/2 teaspoon salt
2 eggs
1/3 cup maple syrup
1 teaspoon vanilla extract

Method:

Pre-heat oven to 180C, grease 12-hole-1-cup muffin tin. Pour water over raisins and allows to soak for 10 minutes.

Mix eggs together with maple syrup and vanilla extract. Combine this mixture with 'dry' ingredients. Add reserved raisin liquid. Spoon into muffin tin and bake for 30-40 minutes. Allow to cool for 10 minutes before removing.
