"Organic" is a term that is defined by law and anything that bears an organic label is governed by a very
strict set of guidelines.
In 1995 the National Organic Standards Board (NOSB) in the US defined organic as follows :
"Organic is an ecological production management system that promotes and enhances biodiversity, biological cycles
and soil biological activity. It is based on the minimal use of off-farm inputs and on management practices that
restore, maintain and enhance ecological harmony".
Today anyone given an organic certification is now required to keep detailed records ensuring full traceability
from farm or production plant to the table. So when you purchase organic products make sure you look for the certified
logo. Below are some of the main logo's you should look for. These international certification bodies have been
set up to ensure that what is claimed to be organic is just that. While claims such as "natural", "free range" and "hormone free" can still appear on food labels these terms should not be confused with "organic". For example the USDA Organic seal can only be displayed on organic food products that contain at least 95% of Certified Organic ingredients.
