Easy Summer Salad Recipe - Brown Rice Salad
This is a yummy and very easy summer salad recipe.
Ingredients: (all organic)
4 cups cooked brown rice
2 tablespoons chopped fresh parsley
1 medium red onion, chopped
1 cup peas, slightly cooked
2 tablespoons balsamic vinegar
1 tablespoon tamari or soy sauce
2 tablespoons olive oil
2 tablespoons sesame seeds or pine nuts, lightly roasted
Pepper and salt to taste
Mix ingredients together, toss gently with dressing and place in the fridge to a few hours to chill.
This is a vegetarian meal you can snack on any time of the day. It is low in fat and snow peas are a great way to add to your daily intake of vitamin C. Red onions are also much higher in flavonoids and antioxidants than white or yellow onions.
TIP: Enjoy this with grilled fish for a complete meal, or simply serve with some shaved parmesan on top.
