Low Fat Organic Red Lentil Recipe



Miranda's red lentil pie..............An easy low fat organic lentil recipe.

Ingredients: (all organic)

2 medium onions, finely chopped
2 carrots, finely chopped
2 celery sticks, finely chopped
2 swedes, finely chopped
6 roma tomatoes, peeled and quartered
200g button mushrooms, quartered
1/2 tsp sea salt
1/4 cup water
1/2 tsp paprika
1 tsp garam masala
1 cup red lentils (brown or green lentils can also be used)
1 clove garlic
3 tbs peanut butter
1.2kg sweet potato, peeled and boiled
Optional: butter and milk if desired

How to Cook Lentils:

Simply pick over to remove debris or shrivled lentils. Rinse and drain them. Cover with water, approximately 2 1/2 times the amount of lentils, and boil for 2-3 minutes. After this time reduce the heat and simmer until tender. Red lentils should take 5-10 minutes, brown and green lentils up to 35 minutes.

Method:

Pre-heat oven to 220 deg C (430 deg F). Prepare lentils as above and place aside to cool. Roast tomatoes on oven tray, medium heat. Fry onions, carrots and spices in a large wok; and when onion is brown add celery, swedes, mushrooms and water. Heat in wok until swedes softens then add peanut butter and tomatoes from the oven.

Combine all ingredients except the sweet potato and place in a baking dish and set aside. Boil and mash the sweet potatoe, use a little butter and milk if desired and place on the top. Sprinkle with some sunflower or sesame seeds for a crunchy topping. Place the pie in the pre-heated oven for 30 minutes

Serves 4: This lentil recipe is great to serve with fresh crusty bread.
