Cooking with Coconut Oil



Cooking with coconut oil is fantastic as it is one of the most stable oils you can buy. It does not turn rancid easily and it won't attack your arteries. It has long been considered by many cultures as a medicine food.

FACT: It makes great massage oil. Coconut oil forms a barrier against infections, softens and moisturizes your skin preventing wrinkling, sagging and age spots. It promotes healthy hair and protects it from any damaging UV rays.

Some tips and Cooking Recipes with Coconut Oil

  • Virgin coconut oil is great in shakes and smoothies. Simply add 1 teaspoon to your mixture.

  • Add some coconut to your honey with a pinch of cinnamon and spread it on your toast, muffins or crumpets for breakfast. Yum!

  • Replace the oil in your cake recipes with coconut oil. I have tried it in both my favorite carrot cake and banana cake with great success.

  • Use it to make bread, frittatas, baked vegetables, roasts, sauteing...in absolutely anything.

TIP: To substitute for vegetable oil, use the amount of oil called for in the recipe. Melt the coconut oil and be sure that the other ingredients e.g. eggs, milk etc are at room temperature or warm enough so that they do not cool the coconut oil enough to make it solidify.

One of my favorite muffin recipes uses both certified organic coconut oil and organic shredded coconut. It is great for kids' lunchboxes and provides you with lots of energy to get through a busy day.

Cooking with coconut oil is truly very simple delightful experience. The health benefits of including it in your daily diet are well worth it. So give it a go!
