Organic Stuffed Mushroom Recipe
Try this easy stuffed mushroom recipe which takes less than 10 minutes to prepare and is sure to delight.
Ingredients: (all organic)
8 large flat mushrooms
2 garlic cloves chopped
2 rashes of lean bacon or ham
2 shallots, finely chopped
1 tablespoon olive oil
salt & pepper
1/2 cup breadcrumbs
2 teaspoons thyme leaves
1/2 cup grated parmesan cheese
1 large egg, separated
Step 1 - Pre-heat oven to 200 deg C (390 deg F). Place baking paper on oven tray. Remove the stalks from the mushrooms and finely chop the stalks.
Step 2 - Mix oil with garlic, salt & pepper. Brush this mixture on both sides of the mushrooms. Place on tray and cook for 10 minutes.
Step 3 - Cook bacon, shallots and chopped mushroom stalks in a fry pan for 3 minutes. Add breadcrumbs and thyme. Stir for another minute. Place in a bowl and stir in the parmesan and egg yolk.
Step 4 - Whisk egg white in a small bowl until stiff peaks form. Fold in the bacon mixture. Remove the mushrooms from the oven and fill with the mixture. Return to oven and bake for a further 10 minutes.
Fact: Washing mushrooms will cause them to absorb water. To prepare them simply wipe away any dirt with a damp cloth or pastry brush
